- 2 ripe avocados (peeled and pitted)
- 1/2 cup unsweetened cocoa powder
- 1/4 cup sugar substitute (such as erythritol or stevia)
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened almond milk (or any preferred milk alternative)
- 1/4 cup chopped nuts (such as almonds or walnuts)
- 2 tablespoons cocoa nibs
- 1 tablespoon unsweetened shredded coconut
Instructions
- In a blender, combine the avocados, cocoa powder, sugar substitute, vanilla extract, and almond milk. Blend until smooth and creamy.
- Taste and adjust sweetness if necessary by adding more sugar substitute.
- Spoon the mousse into serving bowls and refrigerate for at least 30 minutes to set.
- Before serving, top the mousse with chopped nuts, cocoa nibs, and shredded coconut.
