- 2 medium zucchinis
- 8 ounces mushrooms
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh parsley
Instructions
- Slice the zucchinis and mushrooms into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté for 1 minute until fragrant.
- Add mushrooms and cook for 3-4 minutes until they start to soften.
- Add zucchini, salt, black pepper, and red pepper flakes. Cook for an additional 5-7 minutes until zucchini is tender.
- Sprinkle with fresh parsley and serve warm.
