- 2 lbs Russet or Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 1/4 cup olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and chop the potatoes into evenly-sized chunks.
- Soak the chopped potatoes in cold water for 30 minutes, then drain and dry thoroughly.
- Toss the dried potatoes in a large bowl with olive oil, garlic powder, salt, pepper, and rosemary until well coated.
- Spread the potatoes on a baking sheet lined with parchment paper, ensuring they aren’t overcrowded.
- Bake for 45-50 minutes, flipping halfway through until golden brown and crispy.
- Allow to cool slightly before serving.
Notes
- For extra crispiness, make sure the potatoes are completely dry before tossing them with the oil and seasonings.
