Description
A delicious strawberry cream cake made with fresh strawberries and whipped cream.

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 2 cups fresh strawberries (sliced)
- 1/4 cup granulated sugar
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the butter until creamy. Add the eggs, vanilla, and buttermilk, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a bowl, combine sliced strawberries and granulated sugar. Let sit for 15 minutes to release juices.
- In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Place one cake layer on a serving plate. Spread half of the strawberry filling over the top.
- Add a layer of whipped cream on top of the strawberries.
- Place the second cake layer on top and repeat the process with the remaining strawberries and whipped cream.
- Serve immediately or refrigerate until ready to serve.
Notes
- This cake is best served fresh but can be refrigerated for a day.
- Make sure to let the cakes cool completely before assembling to prevent the whipped cream from melting.
