- 115 g (½ cup) unsalted butter, softened
- 150 g (¾ cup) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 box (86 g) instant pistachio pudding mix
- 180 g (1½ cups) all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 100 g (1 cup) chopped pistachios
Instructions
- Preheat Oven: Preheat oven to 175°C / 350°F. Line a baking sheet with parchment paper.
- Cream Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla, mixing well.
- Add Dry Ingredients: In a separate bowl, whisk together flour, pistachio pudding mix, baking soda, and salt. Gradually add to wet ingredients until combined.
- Fold in Pistachios: Gently fold chopped pistachios into the dough.
- Shape Cookies: Scoop dough (about 1 tbsp each) onto the prepared baking sheet, spacing 2 inches apart.
- Bake: Bake for 12–14 minutes, until edges are set but centers remain soft. Cool on a wire rack.

- Make sure the butter is softened for easy creaming with sugar.
