- 1 lb Boneless Chicken Breasts or Thighs
- 2 cups Corn (Fresh grilled, frozen, or canned)
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese
- 1 Lime (freshly squeezed juice)
- 2 cloves Garlic (minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (optional)
Instructions
- Place the boneless chicken breasts or thighs at the bottom of your slow cooker.
- Add corn, cream cheese, cotija cheese, and minced garlic.
- Sprinkle chili powder, smoked paprika, onion powder, and squeeze lime juice over the top.
- Cover and set the slow cooker on Low for 6 hours or High for 3 hours.
- Once cooked, remove the chicken and shred it with two forks.
- Return shredded chicken to the slow cooker and mix with the sauce.
- Garnish with fresh cilantro if desired and serve in tortillas, over rice, or as a dip with chips.
