Ingredients

  • 48 Rolo candies (roughly 4860 candies)

Instructions

  1. Melt the 1 cup butter in a large bowl and stir in the ¾ cup sugar and 1 cup light brown sugar.
  2. Let the mixture cool for 10 to 15 minutes, then mix in the 2 large eggs, 1 Tbsp vanilla extract, 1 tsp baking soda, and ¼ tsp salt.
  3. Add the 3¼ cups all-purpose flour and mix until just moistened, then fold in the 1½ cups chocolate chips.
  4. Preheat your oven to 350°F (175°C/Gas Mark 4) and grease a mini muffin pan.
  5. Fill each cavity two-thirds full with dough and bake for 10 to 12 minutes or until golden brown.
  6. Immediately use the back of a spoon to make a divot in each hot cookie and press one of the 48 Rolo candies into the center of each cookie.
  7. Let the cookies cool completely in the pan on a wire rack before removing. Use a butter knife to gently release the edges if needed.
