Delicious cookies filled with melted Rolo candies for a sweet surprise!
Ingredients

- 1 cup butter (melted)
- ¾ cup sugar
- 1 cup light brown sugar (firmly packed)
- 2 large eggs (beaten)
- 1 Tbsp vanilla extract
- 1 tsp baking soda
- ¼ tsp salt
- 3¼ cups all-purpose flour
- 1½ cups chocolate chips (mini or chopped in a food processor)
- 48 Rolo candies (roughly 48–60 candies)
Instructions
- Melt the 1 cup butter in a large bowl and stir in the ¾ cup sugar and 1 cup light brown sugar.
- Let the mixture cool for 10 to 15 minutes, then mix in the 2 large eggs, 1 Tbsp vanilla extract, 1 tsp baking soda, and ¼ tsp salt.
- Add the 3¼ cups all-purpose flour and mix until just moistened, then fold in the 1½ cups chocolate chips.
- Preheat your oven to 350°F (175°C/Gas Mark 4) and grease a mini muffin pan.
- Fill each cavity two-thirds full with dough and bake for 10 to 12 minutes or until golden brown.
- Immediately use the back of a spoon to make a divot in each hot cookie and press one of the 48 Rolo candies into the center of each cookie.
- Let the cookies cool completely in the pan on a wire rack before removing. Use a butter knife to gently release the edges if needed.
Notes
- For a variation, try using different types of chocolate or add nuts.
- Store cookies in an airtight container for up to one week.
