- 1.5 pounds baby potatoes, halved
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 cloves garlic, minced

- Black pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Potatoes: In a large bowl, combine the halved potatoes with olive oil, rosemary, thyme, garlic, salt, and pepper. Toss until the potatoes are well-coated.
- Roast Potatoes: Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and tender, stirring halfway through.
- Add Feta and Herbs: Remove the potatoes from the oven and transfer them to a serving dish. Sprinkle the crumbled feta cheese over the top while they are still hot.
- Garnish: Garnish with fresh basil leaves for an added burst of flavor and color.
Notes
- For extra crispiness, increase the oven temperature to 425°F (220°C) in the last few minutes of roasting.
- You can add other herbs like parsley or dill for different flavor profiles.
