Description

Delicious roasted potatoes seasoned with fresh herbs and topped with crumbled feta cheese.


Ingredients

  • 1.5 pounds baby potatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes: In a large bowl, combine the halved potatoes with olive oil, rosemary, thyme, garlic, salt, and pepper. Toss until the potatoes are well-coated.
  3. Roast Potatoes: Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and tender, stirring halfway through.
  4. Add Feta and Herbs: Remove the potatoes from the oven and transfer them to a serving dish. Sprinkle the crumbled feta cheese over the top while they are still hot.
  5. Garnish: Garnish with fresh basil leaves for an added burst of flavor and color.

Notes

  • For extra crispiness, increase the oven temperature to 425°F (220°C) in the last few minutes of roasting.
