Braised Beef Chuck Roast

Description

This braised beef chuck roast is tender, flavorful, and perfect served over white rice with roasted vegetables.


Ingredients

Scale
  • 34 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced into large wedges
  • 10 cloves garlic, smashed
  • 2 tablespoons freshly grated ginger
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon toasted sesame oil
  • 14 ounces beef broth
  • to taste Kosher salt
  • to taste fresh cracked black pepper
  • for garnish sliced green onion and sesame seeds
  • for serving white rice and roasted veggies

Instructions

  1. Preheat oven to 325 degrees.
  2. Cut chuck roast into large 2-3 inch pieces. Pat chuck roast dry and season moderately on all sides with plenty of salt and pepper.
  3. Heat oil in a 5 quart braising pan over medium-high heat. Sear chunks of chuck roast until a golden brown crust forms on all sides. Cook in batches and add more oil as needed. Remove and set aside.
  4. Add onion and a couple pinches of salt and pepper and cook for 2 minutes, stirring occasionally. You can add more oil if the pan seems too dry. Add garlic and ginger along with a couple pinches of salt and pepper. Cook, stirring frequently, for 1 minute.
  5. Stir in a splash of beef broth and use it to scrape all the yummy bits off the bottom of the pan.
  6. Stir in orange juice, orange zest, soy sauce, brown sugar, rice vinegar, sesame oil, and the remaining beef broth to the pan along with a couple pinches of salt and pepper.
  7. Nestle the seared chuck roast into the pan. Cover and braise in the oven for 3-3 hours or until the beef shreds easily with two forks.
  8. Serve shredded beef over white rice. Drizzle with braising sauce and garnish with green onion and sesame seeds. Enjoy!
