Description
This braised beef chuck roast is tender, flavorful, and perfect served over white rice with roasted vegetables.

- 3–4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 large yellow onion, sliced into large wedges
- 10 cloves garlic, smashed
- 2 tablespoons freshly grated ginger
- 1 cup orange juice
- 1 tablespoon orange zest
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 1/4 cup rice vinegar
- 1 tablespoon toasted sesame oil
- 14 ounces beef broth
- to taste Kosher salt
- to taste fresh cracked black pepper
- for garnish sliced green onion and sesame seeds
- for serving white rice and roasted veggies
Instructions
- Preheat oven to 325 degrees.
- Cut chuck roast into large 2-3 inch pieces. Pat chuck roast dry and season moderately on all sides with plenty of salt and pepper.
- Heat oil in a 5 quart braising pan over medium-high heat. Sear chunks of chuck roast until a golden brown crust forms on all sides. Cook in batches and add more oil as needed. Remove and set aside.
- Add onion and a couple pinches of salt and pepper and cook for 2 minutes, stirring occasionally. You can add more oil if the pan seems too dry. Add garlic and ginger along with a couple pinches of salt and pepper. Cook, stirring frequently, for 1 minute.
- Stir in a splash of beef broth and use it to scrape all the yummy bits off the bottom of the pan.
- Stir in orange juice, orange zest, soy sauce, brown sugar, rice vinegar, sesame oil, and the remaining beef broth to the pan along with a couple pinches of salt and pepper.
- Nestle the seared chuck roast into the pan. Cover and braise in the oven for 3-3 hours or until the beef shreds easily with two forks.
- Serve shredded beef over white rice. Drizzle with braising sauce and garnish with green onion and sesame seeds. Enjoy!
