- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 cup unsweetened almond milk
- ⅓ cup vegetable oil
- ½ cup fresh grapefruit juice
- Zest of 1 grapefruit
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine almond milk, vegetable oil, grapefruit juice, and zest until mixed.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick comes out clean.
- Allow cooling for ten minutes in the pan before transferring to a wire rack.
Notes
- For a more intense grapefruit flavor, consider adding a grapefruit glaze on top of the cake after cooling.
