Description

Ingredients

  • 200g feta cheese, cut into cubes
  • 1 cup mixed olives (such as Kalamata and green olives)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red chili flakes
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper, to taste
  • 1 roasted red pepper, chopped
  • Zest of 1 lemon

Instructions

  1. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, red chili flakes, lemon zest, salt, and pepper. Mix well to combine.
  2. Place the feta cubes and mixed olives in a large bowl. Add the chopped roasted red pepper and fresh parsley.
  3. Pour the marinade over the feta and olive mixture, gently tossing to coat all the ingredients evenly.
  4. Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 2 hours to allow the flavors to meld together. For best results, marinate overnight.
  5. Remove from the refrigerator and allow it to come to room temperature before serving to enhance the flavors. Serve as an appetizer with crusty bread or as part of a charcuterie board.
