Ingredients

- 200g feta cheese, cut into cubes
- 1 cup mixed olives (such as Kalamata and green olives)
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon red chili flakes
- 1 tablespoon chopped fresh parsley
- Salt and pepper, to taste
- 1 roasted red pepper, chopped
- Zest of 1 lemon
Instructions
- In a mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, red chili flakes, lemon zest, salt, and pepper. Mix well to combine.
- Place the feta cubes and mixed olives in a large bowl. Add the chopped roasted red pepper and fresh parsley.
- Pour the marinade over the feta and olive mixture, gently tossing to coat all the ingredients evenly.
- Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 2 hours to allow the flavors to meld together. For best results, marinate overnight.
- Remove from the refrigerator and allow it to come to room temperature before serving to enhance the flavors. Serve as an appetizer with crusty bread or as part of a charcuterie board.

- Feel free to adjust the amount of chili flakes to suit your spice preference.
