Description
A refreshing salad made with couscous, vegetables, and a light dressing.
Ingredients

- 1 cup couscous
- 1 cup vegetable broth (or water)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup fresh mint (chopped)
- 1/4 cup olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon honey (optional)
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon black pepper (to taste)
Instructions
- In a medium saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and allow to cool.
- In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, parsley, and mint.
- Add the cooled couscous to the bowl and mix well.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

- This salad can be made ahead of time for meal prep.
- Feel free to add other vegetables like bell peppers or avocado.
