Description

A refreshing salad made with couscous, vegetables, and a light dressing.


Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth (or water)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon honey (optional)
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper (to taste)

Instructions

  1. In a medium saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. Fluff couscous with a fork and allow to cool.
  3. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, parsley, and mint.
  4. Add the cooled couscous to the bowl and mix well.
  5. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
