Ingredients

- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 cup fresh strawberries, chopped
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, oil, and eggs until smooth.
- Combine wet ingredients with dry ingredients; it’s okay if the batter is slightly lumpy.
- Gently fold in the chopped strawberries.
- Spoon the batter into muffin cups until about three-quarters full.
- Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before transferring to a wire rack.
Notes
- Store muffins in an airtight container for up to 3 days.
- For added flavor, consider adding a splash of vanilla extract to the wet ingredients.
