- 4 bone-in chicken thighs
- 2 tbsp extra virgin olive oil
- 1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 head green or purple cabbage, sliced into wedges
- 2 tbsp Dijon mustard
- 1 tbsp honey
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Place the chicken thighs on the baking sheet, drizzle with olive oil, and season with thyme, salt, and pepper.
- In a bowl, mix Dijon mustard and honey; brush this mixture onto the cabbage wedges before placing them on the baking sheet alongside the chicken.
- Roast everything in the oven for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
- Let rest for five minutes before serving.

- Ensure chicken is cooked to the recommended internal temperature for safety.
- You can use either green or purple cabbage based on your preference.
