Description

A delicious and simple recipe for oven roasted chicken thighs paired with seasoned cabbage wedges.


Ingredients

  • 4 bone-in chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 head green or purple cabbage, sliced into wedges
  • 2 tbsp Dijon mustard
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Place the chicken thighs on the baking sheet, drizzle with olive oil, and season with thyme, salt, and pepper.
  3. In a bowl, mix Dijon mustard and honey; brush this mixture onto the cabbage wedges before placing them on the baking sheet alongside the chicken.
  4. Roast everything in the oven for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  5. Let rest for five minutes before serving.
