- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup dark brown sugar
- 1/4 cup granulated sugar
- 2 large eggs, at room temperature
- 1 cup toasted pecans, chopped
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy (about 2-3 minutes).
- Beat in the eggs one at a time along with the vanilla extract until smooth.
- In another bowl, whisk together the flour, baking powder, salt, and cinnamon; fold into the wet ingredients until just combined.
- Grease a muffin tin and scoop the dough into each cup until about two-thirds full. Press down gently to form cups.
- In a separate bowl, mix together the toasted pecans, brown sugar, eggs, vanilla extract, and salt for the filling.
- Pour the pecan mixture into each cookie cup.
- Bake for 20-25 minutes until set but slightly soft in the center.
- Let cool before removing from the tin.
