Description

Delicious mini chocolate marshmallow cheesecakes with a graham cracker crust.


Ingredients

  • 1 cup crushed graham crackers
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • ½ cup mini chocolate chips
  • 1 cup marshmallow fluff
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers and melted butter. Press into mini muffin liners in a muffin tin.
  2. Bake for 5-7 minutes until lightly golden. Allow cooling.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually mix in sugar and vanilla extract until creamy.
  4. Fold in mini chocolate chips and marshmallow fluff.
  5. Spoon the filling into each cooled crust until nearly full and smooth the tops.
  6. Bake for another 10-12 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
