Delicious mini chocolate marshmallow cheesecakes with a graham cracker crust.
Ingredients

- 1 cup crushed graham crackers
- 4 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- ½ cup granulated sugar
- 1 tsp pure vanilla extract
- ½ cup mini chocolate chips
- 1 cup marshmallow fluff
- 2 tbsp unsweetened cocoa powder
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers and melted butter. Press into mini muffin liners in a muffin tin.
- Bake for 5-7 minutes until lightly golden. Allow cooling.
- In a large bowl, beat softened cream cheese until smooth. Gradually mix in sugar and vanilla extract until creamy.
- Fold in mini chocolate chips and marshmallow fluff.
- Spoon the filling into each cooled crust until nearly full and smooth the tops.
- Bake for another 10-12 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
