Description

A delicious and healthy side dish featuring roasted Brussels sprouts and sweet potatoes drizzled with maple syrup.


Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 lb sweet potatoes, peeled and cubed
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/4 cup pure maple syrup
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Brussels sprouts, sweet potatoes, olive oil, salt, and pepper until well coated.
  3. Drizzle maple syrup over the mixture, add half of the cranberries, and toss to combine.
  4. Spread on a parchment-lined baking sheet in a single layer.
  5. Roast for 25-30 minutes until golden brown and tender.
  6. In the last five minutes of roasting, sprinkle on chopped pecans and remaining cranberries.
  7. Serve warm with an extra drizzle of maple syrup if desired.
