A delicious and healthy side dish featuring roasted Brussels sprouts and sweet potatoes drizzled with maple syrup.

- 1 lb Brussels sprouts, trimmed and halved
- 1 lb sweet potatoes, peeled and cubed
- 1 cup dried cranberries
- 1/2 cup chopped pecans
- 1/4 cup pure maple syrup
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss Brussels sprouts, sweet potatoes, olive oil, salt, and pepper until well coated.
- Drizzle maple syrup over the mixture, add half of the cranberries, and toss to combine.
- Spread on a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes until golden brown and tender.
- In the last five minutes of roasting, sprinkle on chopped pecans and remaining cranberries.
- Serve warm with an extra drizzle of maple syrup if desired.
