- 4 boneless, skinless chicken breasts
- 2 limes (juiced)
- 1/4 cup raw honey
- 3 garlic cloves (minced)
- 2 ripe avocados
- 1/4 cup fresh cilantro (chopped)
- 1 cup white rice (uncooked)
- 2 tbsp low-sodium soy sauce
Instructions
- Marinate the chicken: Combine lime juice, honey, minced garlic, and soy sauce in a bowl. Add the chicken breasts and marinate for at least 30 minutes.
- Cook the rice: Prepare white rice according to package instructions. Fluff and let cool slightly.
- Cook the chicken: Grill or sauté marinated chicken over medium-high heat for about 6-7 minutes per side until golden brown and cooked through (165°F internal temperature).
- Prepare the avocados: Mash avocados with remaining lime juice in a bowl to prevent browning.
- Layer your stack: On plates or bowls, layer rice, mashed avocado, and sliced grilled chicken. Drizzle with any remaining marinade if desired.
- Garnish and serve: Top with fresh cilantro before serving warm or at room temperature.
