Description

Delicious and savory stuffed chicken breasts filled with creamy goat cheese and fresh herbs.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz creamy goat cheese
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Slice pockets into each chicken breast for stuffing.
  3. In a bowl, mix goat cheese, garlic, thyme, rosemary, salt, and pepper until well combined.
  4. Generously stuff each chicken breast pocket with the cheese mixture.
  5. Place the stuffed breasts in the baking dish; drizzle with olive oil and season with extra salt and pepper.
  6. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
