- 4 boneless, skinless chicken breasts
- 8 oz creamy goat cheese
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh rosemary, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Slice pockets into each chicken breast for stuffing.
- In a bowl, mix goat cheese, garlic, thyme, rosemary, salt, and pepper until well combined.
- Generously stuff each chicken breast pocket with the cheese mixture.
- Place the stuffed breasts in the baking dish; drizzle with olive oil and season with extra salt and pepper.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
Notes
- For best flavor, let the stuffed chicken rest for a few minutes before slicing.
