Description

A delicious spinach and cheddar egg bake, perfect for brunch or a light dinner.


Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 cups fresh baby spinach
  • 6 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, diced
  • ½ tsp salt (to taste)
  • ¼ tsp black pepper (to taste)
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a 9-inch baking dish with nonstick cooking spray.
  2. In a skillet, heat olive oil over medium heat and sauté diced onion until soft and translucent, about 5 minutes.
  3. Add fresh spinach to the skillet and stir until wilted, approximately 2 minutes. Set aside to cool slightly.
  4. In a large bowl, whisk together the eggs until smooth; mix in cottage cheese, cheddar cheese, salt, and pepper until fully combined.
  5. Fold in the sautéed onions and spinach until evenly distributed.
  6. Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until set in the center and lightly golden on top.
  7. Allow to cool slightly before slicing; serve warm.
