- 3 cups boneless, skinless chicken breasts (cubed)
- 2 cloves fresh garlic (minced)
- 2 cups mixed vegetables (frozen or fresh)
- 1 cup low-sodium chicken broth
- 1 package Red Lobster Cheddar Biscuit Mix
- 1 cup shredded sharp cheddar cheese
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken cubes with salt and pepper; place in the baking dish.
- In a skillet over medium heat, sauté minced garlic until fragrant. Add mixed vegetables and cook until tender.
- Pour chicken broth into the skillet, letting it simmer for about five minutes.
- Pour the veggie mixture over the chicken in the baking dish.
- Prepare the biscuit mix according to package instructions, folding in cheddar cheese, then spoon over the chicken.
- Bake for 25-30 minutes until biscuits are golden brown.
