A delicious lemon pie that is easy to make and perfect for dessert!
Ingredients

- 1 cup granulated sugar
- 1/2 cup Bisquick baking mix
- 4 large eggs (room temperature)
- 1/4 cup unsalted butter, melted
- 2 cups whole milk (room temperature)
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- optional powdered sugar or whipped cream for serving
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
- In a blender, combine sugar, Bisquick, eggs, butter, milk, lemon juice, zest, vanilla, and salt. Blend until smooth.
- Pour the mixture into the greased pie dish and let it rest briefly to release bubbles.
- Place the dish on a baking sheet and bake for 50–55 minutes until set and golden.
- Let the pie cool completely on a wire rack, then chill in the fridge for at least 1 hour.
- Dust with powdered sugar or top with whipped cream before serving.
Notes
- For best results, use room temperature ingredients.
- This pie can be served warm or chilled.
- Store any leftovers in the refrigerator.
