Description

Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup red wine
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Fresh parsley for garnish
  • 2 tablespoons all-purpose flour (optional, for thickening)

Instructions

  1. Prepare the Oxtail: Season the oxtail pieces with salt and pepper.
  2. Brown the Oxtail: Heat olive oil in a large pot over medium-high heat. Sear the oxtail pieces on all sides until browned. Remove from the pot and set aside.
  3. Sauté Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the onion is translucent.
  4. Deglaze the Pot: Pour in the red wine, scraping the bottom to release any browned bits. Let the wine reduce by half.
  5. Combine Ingredients: Return the oxtail to the pot. Stir in the tomato paste, beef broth, thyme, and bay leaves.
  6. Simmer: Bring to a boil, then reduce heat to low. Cover and let it simmer for 3 to 4 hours, or until the meat is tender.
  7. Thicken (Optional): For a thicker stew, remove the oxtail and whisk in flour. Cook for another 10 minutes.
  8. Adjust Seasoning: Taste and adjust salt and pepper as needed.
  9. Serve: Garnish with fresh parsley before serving.

  • Slow Cooker Option: This stew can be made in a slow cooker. After browning the oxtail and sautéing the vegetables, transfer everything to a slow cooker and cook on low for 8 hours.
