- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Fresh parsley for garnish
- 2 tablespoons all-purpose flour (optional, for thickening)
Instructions
- Prepare the Oxtail: Season the oxtail pieces with salt and pepper.
- Brown the Oxtail: Heat olive oil in a large pot over medium-high heat. Sear the oxtail pieces on all sides until browned. Remove from the pot and set aside.
- Sauté Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the onion is translucent.
- Deglaze the Pot: Pour in the red wine, scraping the bottom to release any browned bits. Let the wine reduce by half.
- Combine Ingredients: Return the oxtail to the pot. Stir in the tomato paste, beef broth, thyme, and bay leaves.
- Simmer: Bring to a boil, then reduce heat to low. Cover and let it simmer for 3 to 4 hours, or until the meat is tender.
- Thicken (Optional): For a thicker stew, remove the oxtail and whisk in flour. Cook for another 10 minutes.
- Adjust Seasoning: Taste and adjust salt and pepper as needed.
- Serve: Garnish with fresh parsley before serving.

- Slow Cooker Option: This stew can be made in a slow cooker. After browning the oxtail and sautéing the vegetables, transfer everything to a slow cooker and cook on low for 8 hours.
