- 2 cups rolled oats
- 1 teaspoon cinnamon
- Pinch of salt
- 2 ripe apples
- 1/2 cup nut butter (almond or peanut butter, or sunflower seed butter for nut allergies)
- 1/4 cup honey (or maple syrup, agave syrup, or a sugar substitute like stevia)
- 1 egg (or flax egg: 1 tablespoon ground flaxseed mixed with 2 tablespoons water)
- 1/2 cup raisins or chopped nuts (optional)
Instructions
- Preheat your oven to 180°C (350°F).
- Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, cinnamon, and a pinch of salt. Stir well.
- In another bowl, mash the ripe apples with a fork. Add the nut butter, honey (or chosen sweetener), and egg (or flax egg). Mix until smooth.
- Pour the wet mixture into the dry ingredient bowl. Stir gently until just combined.
- If desired, add raisins or chopped nuts to the mixture.
- Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for about 15-20 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
