Ingredients

  • 1/4 cup honey (or maple syrup, agave syrup, or a sugar substitute like stevia)
  • 1 egg (or flax egg: 1 tablespoon ground flaxseed mixed with 2 tablespoons water)
  • 1/2 cup raisins or chopped nuts (optional)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the rolled oats, cinnamon, and a pinch of salt. Stir well.
  4. In another bowl, mash the ripe apples with a fork. Add the nut butter, honey (or chosen sweetener), and egg (or flax egg). Mix until smooth.
  5. Pour the wet mixture into the dry ingredient bowl. Stir gently until just combined.
  6. If desired, add raisins or chopped nuts to the mixture.
  7. Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for about 15-20 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
