  • 5 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon milk
  • Coarse sugar (for sprinkling)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Pie Crust: Roll out one half of the pie crust and fit it into a 9-inch pie plate. Trim the edges, leaving about 1 inch overhang.
  3. Prepare the Strawberry Filling: In a large bowl, combine strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until the strawberries are evenly coated.
  4. Assemble the Pie: Pour the strawberry mixture into the prepared crust. Roll out the second half of the pie crust and place it over the top of the strawberry filling. Trim and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
  5. Egg Wash: In a small bowl, beat the egg with the milk. Brush the top crust with the egg wash. Sprinkle coarse sugar evenly over the top.
  6. Bake: Place the pie on the middle rack of the oven. Bake for 15 minutes. Reduce the oven temperature to 375°F (190°C) and continue baking for another 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Cool: Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving. This ensures the filling sets properly.

Notes

  • To prevent the edges of the crust from over-browning, cover them with strips of aluminum foil or a pie crust shield during baking.
