- 1 pound ground beef
- 1 small head green cabbage, chopped
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 can (8 ounces) tomato sauce
- 1 cup frozen corn
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups shredded cheddar cheese
- 2 cups corn chips (such as Fritos)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Break it apart with a wooden spoon as it cooks. Once browned, drain any excess grease.
- Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds, just until fragrant.
- Stir in the chopped cabbage. Let it sauté for about 8–10 minutes, stirring occasionally, until it softens and begins to turn tender.
- Add the diced tomatoes with green chilies, tomato sauce, frozen corn, chili powder, paprika, salt, and black pepper. Stir everything together until well combined. Reduce the heat to low and let the mixture simmer for 10–15 minutes.
- Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet for a few minutes until the cheese melts. Just before serving, scatter the corn chips across the top.

- Serve hot, straight from the skillet, while the cheese is melty and the chips are crisp.
