Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Dissolve Coffee: In a small bowl, mix the instant coffee granules with the whole milk until dissolved.
- Mix Wet Ingredients: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt.
- Combine All: Gradually add the dry ingredients to the wet ingredients, alternating with the coffee-milk mixture.
- Bake: Divide the batter evenly between the prepared pans. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- Dissolve Coffee (Frosting): Dissolve the instant coffee granules in hot water, and let it cool.
- Mix Butter and Sugar: In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, beating until well combined.
- Add and Mix: Add the dissolved coffee, vanilla extract, and heavy cream to the butter mixture. Beat until fluffy and smooth.
- Assemble the Cake:
- First Layer: Place one cake layer on a serving platter. Spread a layer of coffee cream frosting on top.
- Second Layer: Place the second cake layer on top, and spread frosting over the top and sides of the cake.
- Decorate: Decorate with chocolate shavings or a dusting of cocoa powder. Press almond or hazelnut crumbs onto the sides of the cake.
