- 1 lb gnocchi (store-bought or homemade)
- 4 cups fresh spinach (chopped)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella
- 0 cups parmesan cheese (grated)
- 1 egg (large)
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- salt (to taste)
- pepper (to taste)
- 0 cups fresh basil (chopped)
Instructions
- Preheat your oven to 375°F.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and stir until fragrant, about 2 minutes.
- Toss in the chopped spinach and cook until wilted, roughly 3-4 minutes.
- In a large bowl, combine ricotta, egg, salt, pepper, and half of the grated parmesan. Stir until creamy and well-blended.
- Carefully add the sautéed spinach and gnocchi to the mixture, stirring gently to coat.
- Pour the mixture into a greased baking dish. Spread it out evenly.
- Top with shredded mozzarella and the remaining parmesan.
- Bake for 25-30 minutes, or until the top is golden brown and bubbling.
- Allow the bake to rest for 5-10 minutes before serving.
