Description

A delicious and creamy baked dish featuring gnocchi, fresh spinach, and ricotta cheese.


Ingredients

  • 1 lb gnocchi (store-bought or homemade)
  • 4 cups fresh spinach (chopped)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 0 cups parmesan cheese (grated)
  • 1 egg (large)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • salt (to taste)
  • pepper (to taste)
  • 0 cups fresh basil (chopped)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and stir until fragrant, about 2 minutes.
  3. Toss in the chopped spinach and cook until wilted, roughly 3-4 minutes.
  4. In a large bowl, combine ricotta, egg, salt, pepper, and half of the grated parmesan. Stir until creamy and well-blended.
  5. Carefully add the sautéed spinach and gnocchi to the mixture, stirring gently to coat.
  6. Pour the mixture into a greased baking dish. Spread it out evenly.
  7. Top with shredded mozzarella and the remaining parmesan.
  8. Bake for 25-30 minutes, or until the top is golden brown and bubbling.
  9. Allow the bake to rest for 5-10 minutes before serving.
