Description

This simple roasted asparagus recipe is a perfect side dish that adds a fresh, vibrant flavor to your meal.


Ingredients

  • 1 bunch asparagus (ends trimmed)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1/2 cup freshly grated parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425F and move the rack to the middle position.
  2. Place the asparagus on a baking sheet (if desired, line with foil or parchment paper for easy clean-up), and then pour the olive oil and lemon juice on top, then sprinkle with the garlic powder and salt and pepper.
  3. Use your hands to toss, and then spread the asparagus in an even layer.
  4. Sprinkle the parmesan over top.
  5. Bake, uncovered, for 12-15 minutes or until cooked to your liking. Asparagus thickness can vary a lot, so check for doneness on the earlier side of cooking time if your asparagus is of average thickness. For super thin asparagus, I’d test after 10 minutes.
