Description

A delicious side dish of roasted baby potatoes tossed in garlic butter and topped with fresh parsley.


Ingredients

  • 1 lb baby potatoes
  • 4 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the baby potatoes, then cut them in half.
  3. In a small saucepan over low heat, melt the unsalted butter and add minced garlic. Simmer for about one minute until fragrant.
  4. In a large bowl, toss the halved potatoes with salt, pepper, and garlic butter until well coated.
  5. Spread the seasoned potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes until golden brown and crispy.
  6. Sprinkle with fresh parsley before serving.
