Description
Decadent and easy to make, these chocolate peanut butter dates are the perfect sweet treat.
Ingredients

- 20 Medjool Dates (I use Natural Delights brand)
- ½ cup creamy peanut butter (I use Justin’s Brand)
- ¼ cup chopped peanuts
- 1 cup dark chocolate chips
- 1 tsp avocado oil (or coconut oil)
- 1 tsp flaky sea salt, to taste (Maldon is a great brand)
Instructions
- Line a baking sheet with parchment paper for easy clean-up. Slice dates in the middle with a sharp knife. If your dates have pits, remove the pits. Line the dates up on the parchment-lined baking sheet slit side up.
- Smash the dates with the bottom of a glass cup. Spray the glass with cooking spray so the dates don’t get stuck to it. Be sure the dates are as close together as possible.
- Add a layer of peanut butter on top of the dates and smooth it out gently with a spatula. It helps to microwave the peanut butter for 20-30 seconds in a small bowl first to make it easier to spread.
- Combine the dark chocolate chips and avocado oil in a microwave-safe bowl. Melt chocolate in the microwave by heating it in 30-second intervals, stirring in between until it is melted. Pour the chocolate over the peanut butter layer. Smooth it out with the spatula.
- Sprinkle the chopped peanuts and flaky sea salt evenly on top of the chocolate. Refrigerate or freeze for at least 30 minutes until everything is set. The final step is to cut it into evenly sized pieces.
- Hint: store in the freezer or fridge and let them thaw at least 10 minutes to room temperature before serving.
Notes
- For a richer flavor, feel free to experiment with different brands of chocolate and peanut butter.
- These treats can be made ahead and stored in the refrigerator or freezer for later.
