- 1 (32 oz) package frozen shredded hash browns, thawed
- 1 (10 oz) can cream of chicken soup
- 1 (16 oz) container sour cream
- 1 cup whole milk
- 1/2 cup unsalted butter, melted
- 1 small yellow onion, finely diced
- 2 cups shredded sharp cheddar cheese, divided
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (optional, to taste)
- 2 cups cornflakes, lightly crushed
- 2 tablespoons unsalted butter, melted
Instructions
- In a large mixing bowl, combine the thawed hash browns, cream of chicken soup, sour cream, milk, melted butter, diced onion, 1 1/2 cups of the shredded cheddar cheese, garlic powder, and black pepper. Mix until everything is evenly incorporated.
- Lightly grease the insert of a 6-quart slow cooker with non-stick cooking spray.
- Transfer the potato mixture into the slow cooker and spread it into an even layer.
- Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.
- Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the casserole is hot and bubbly throughout.
- About 30 minutes before serving, preheat your oven’s broiler (or oven to 450°F).
- In a small bowl, mix the crushed cornflakes with the 2 tablespoons of melted butter.
- Carefully transfer the hot potato casserole from the slow cooker to a broiler-safe baking dish (or broil directly in a removable slow cooker insert if it’s oven-safe).
- Sprinkle the buttered cornflake mixture evenly over the top.
- Place under the broiler (or in the hot oven) for 2-4 minutes, watching closely, until the topping is golden brown and crispy.
- Let the casserole rest for 5-10 minutes before serving warm.

- This dish can be assembled the night before and cooked in the slow cooker the next day.
