A delicious layered lasagna made with oven-ready noodles, mushrooms, spinach, and a rich cheese mixture.

- 12 ounces oven-ready lasagna noodles
- 8 ounces cremini mushrooms
- 8 ounces shiitake mushrooms
- 4 cups fresh spinach
- 1 tablespoon olive oil
- 1 onion
- 2 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon nutmeg
- 15 ounces ricotta cheese
- 1 egg (optional)
- 1 cup grated Parmesan cheese
- 1/4 cup fresh basil
- 3 cups tomato sauce
- 2 cups shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent.
- Add the sliced mushrooms and cook until they release their moisture and start to brown.
- Stir in the fresh spinach until wilted. Season with salt, pepper, and a pinch of nutmeg.
- In a bowl, combine ricotta cheese, an egg (if using), grated Parmesan, and chopped fresh basil. Mix well and season with a little salt and pepper.
- In a baking dish, spread a thin layer of tomato sauce on the bottom. Place a layer of lasagna noodles over the sauce.
- Add half of the sautéed mushroom and spinach mixture, followed by half of the ricotta mixture, and a layer of shredded mozzarella.
- Repeat the layers: sauce, noodles, remaining vegetables, ricotta, and mozzarella.
- Finish with a final layer of noodles, a generous amount of tomato sauce, and a sprinkle of mozzarella and Parmesan cheese on top.
- Cover the baking dish with foil (to prevent sticking, spray the foil with cooking spray) and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Allow the lasagna to cool for about 10-15 minutes before slicing.
Notes
- For a richer flavor, consider adding Italian seasoning to the ricotta mixture.
- Letting the lasagna sit before slicing helps with serving.
