Description

A delicious layered lasagna made with oven-ready noodles, mushrooms, spinach, and a rich cheese mixture.


Ingredients

  • 12 ounces oven-ready lasagna noodles
  • 8 ounces cremini mushrooms
  • 8 ounces shiitake mushrooms
  • 4 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 15 ounces ricotta cheese
  • 1 egg (optional)
  • 1 cup grated Parmesan cheese
  • 1/4 cup fresh basil
  • 3 cups tomato sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent.
  3. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  4. Stir in the fresh spinach until wilted. Season with salt, pepper, and a pinch of nutmeg.
  5. In a bowl, combine ricotta cheese, an egg (if using), grated Parmesan, and chopped fresh basil. Mix well and season with a little salt and pepper.
  6. In a baking dish, spread a thin layer of tomato sauce on the bottom. Place a layer of lasagna noodles over the sauce.
  7. Add half of the sautéed mushroom and spinach mixture, followed by half of the ricotta mixture, and a layer of shredded mozzarella.
  8. Repeat the layers: sauce, noodles, remaining vegetables, ricotta, and mozzarella.
  9. Finish with a final layer of noodles, a generous amount of tomato sauce, and a sprinkle of mozzarella and Parmesan cheese on top.
  10. Cover the baking dish with foil (to prevent sticking, spray the foil with cooking spray) and bake for 25 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  12. Allow the lasagna to cool for about 10-15 minutes before slicing.

Notes

  • For a richer flavor, consider adding Italian seasoning to the ricotta mixture.
  • Letting the lasagna sit before slicing helps with serving.
