Description

A creamy and delicious cheesy chicken spaghetti dish that is easy to make and perfect for dinner.

Ingredients

Scale
  • 1 lb chicken breast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced (plus garlic powder if used)
  • 8 oz spaghetti
  • 8 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Season the chicken breasts with salt, black pepper, and garlic powder. Heat a large skillet over medium-high heat, then cook the chicken until it turns golden brown and is cooked through, about 6-8 minutes per side depending on thickness. Remove from heat and slice the chicken into strips.
  2. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually 8-10 minutes. Drain the spaghetti, reserving some pasta water if desired.
  3. In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add Velveeta cubes and stir continuously until melted and smooth. Whisk in shredded mozzarella cheese gradually stirring until the sauce is creamy and fully combined.
  4. Add the drained spaghetti into the cheese sauce and toss thoroughly so all noodles are evenly coated with the creamy cheese mixture. If the sauce is too thick, add a small amount of reserved pasta water to loosen it.
  5. Serve the cheesy spaghetti on plates, then top with the sliced cooked chicken. Garnish with chopped parsley for a fresh finish and enhanced presentation.

Notes

  • For additional flavor, consider adding more garlic powder to the seasoning mixture.
  • This dish can be made ahead of time and reheated for a quick meal.
