Description
A delicious and creamy fettuccine pasta dish featuring salmon, garlic, and parmesan.
Ingredients

- 8 oz fettuccine pasta
- 12 oz salmon fillets (2 fillets at 6 oz each)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- Zest of 1 lemon
- ½ cup grated Parmesan cheese
- 2 tbsp fresh parsley (chopped)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the fettuccine in salted boiling water until al dente, then drain, reserving some pasta water.
- In a large skillet over medium heat, add olive oil and sear the salmon fillets skin-side down for about 4-5 minutes per side until cooked through. Remove from skillet and flake into chunks.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
- Pour in the heavy cream and simmer for 2-3 minutes until slightly thickened.
- Flake the salmon back into the pan along with lemon zest, then toss with cooked fettuccine and reserved pasta water as needed for consistency.
- Finish with grated Parmesan cheese and chopped parsley before serving.
Notes
- For a bit of extra flavor, consider adding a pinch of red pepper flakes for heat.
- Using fresh salmon can greatly enhance the taste of the dish.
