Description

A delicious creamy dip made with ground beef, cheese, and spices, perfect for serving with tortilla chips.

Ingredients

Scale
  • 1 lb Ground Beef (Can substitute with turkey for a lighter version.)
  • 10 oz Rotel Tomatoes (Opt for plain diced tomatoes for a milder taste.)
  • 1 medium Onion (Yellow or white works well.)
  • 2 cloves Garlic (Use freshly minced for best flavor.)
  • 1 tbsp Chili Powder (Adjust to your preferred spice level.)
  • 16 oz Velveeta Cheese (Shredded cheddar can substitute but won’t melt as well.)
  • 8 oz Cream Cheese (Consider light cream cheese for a healthier choice.)
  • to taste Salt
  • to taste Pepper
  • 1 cup Diced Jalapeños (For extra spice.)
  • 1 cup Extra Cheese (Adjust thickness to preference.)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until no longer pink, breaking it apart with a spatula, about 5-7 minutes.
  2. Drain excess grease, add chopped onion and minced garlic, and sauté until the onion is softened and translucent, about 3-4 minutes.
  3. Stir in Rotel tomatoes and chili powder, and allow to simmer gently for about 3 minutes.
  4. Add Velveeta cheese cubes to the skillet, stirring until melted and creamy, about 2-3 minutes.
  5. Mix in cream cheese until fully incorporated.
  6. Season with salt and pepper to taste, then transfer to a serving bowl and serve warm with tortilla chips.

Notes

  • This dip can be made lighter by substituting turkey for ground beef and using light cream cheese.
  • For a milder flavor, opt for plain diced tomatoes instead of Rotel.
  • Adjust the amount of jalapeños and chili powder based on your spice preference.
