Instructions
- Boil the cubed Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes.
- While the potatoes boil, roast the garlic by slicing off the top, drizzling with olive oil, wrapping in foil, and baking at 400°F for 30 minutes.
- Drain the potatoes and return them to the pot.
- Squeeze the roasted garlic into the potatoes, then add olive oil and vegetable broth to achieve your desired creaminess.
- Mash until smooth or leave some chunks for texture.
- Season with salt and pepper before serving.
