Description

A delicious creamy chicken Alfredo pasta recipe that is easy to make and perfect for any occasion.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 12 oz (340g) penne pasta
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • to taste salt and pepper
  • 1 tablespoon unsalted butter
  • for garnish fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the Pasta: Boil a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and let rest for 5 minutes. Then slice into strips.
  3. Make the Alfredo Sauce: In the same skillet, reduce the heat to medium. Melt the butter and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring constantly. Allow it to simmer for 3-4 minutes. Gradually whisk in the Parmesan cheese until the sauce is smooth. Add red pepper flakes if using. Season with additional salt and pepper to taste.
  4. Combine Everything: Add the cooked penne pasta and sliced chicken back into the skillet with the Alfredo sauce. Toss gently to coat everything evenly.
  5. Serve: Transfer the creamy chicken Alfredo pasta to a serving dish. Garnish with chopped fresh parsley and additional Parmesan cheese if desired.
