Description

Deliciously rich brownies with a creamy cheesecake swirl.


Ingredients

  • 1 cup unsalted butter (cut into tablespoons for easy melting)
  • 1 cup semisweet chocolate chips
  • 3/4 cup dutch cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1/3 cup chocolate chips (optional)
  • 8 ounces cream cheese (softened to room temperature)
  • 1/4 cup sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F and spray an 8×8 baking pan with baking spray. For easy removal, line pan with tin foil or parchment paper.
  2. Combine butter and chocolate chips in a large, microwave-safe bowl until melted by microwaving in 30 seconds increments. Stir well in between each increment until chocolate and butter are completely melted and well-combined.
  3. Add cocoa powder and stir well.
  4. Add sugars, stir until completely combined.
  5. Add eggs and then egg yolk, one at a time, stirring well after each addition.
  6. Add vanilla extract and stir to combine.
  7. Add salt and flour and stir until completely combined.
  8. Optional, fold in the chocolate chips if desired.
  9. Reserve 1/4 cup of the brownie batter and spread the rest of the batter evenly into prepared pan. Prepare your cream cheese topping.
  10. Using a mixer, beat together the very softened cream cheese and sugar in a medium-sized bowl until well-combined.
  11. Pour cream cheese batter over prepared brownie batter. Take your reserved ¼ cup brownie batter and spoon over cheesecake layer.
  12. Use a knife to swirl brownie batter and cheesecake together.
  13. Bake on 350°F for 40-45 minutes or until center is set and you see the cheesecake on the edges puff up and just begin to crack. A skewer or toothpick won’t work with checking the brownies because of the cheesecake mixture, so once the center is set, pull them from the oven.
  14. Allow brownies to cool completely before cutting and serving.
