Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In another large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add Wet Ingredients: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Combine with Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.
  6. Fold in Cranberries: Gently fold the cranberries into the batter.
  7. Bake the Cake: Pour the batter into the prepared cake pan. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  8. Prepare the Frosting: In a large bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract. Beat until smooth and creamy. If needed, add milk to achieve desired consistency.
  9. Frost the Cake: Once the cake is completely cooled, spread the cream cheese frosting over the top. Garnish with additional cranberries.
