  • 1/2 cup sun-dried tomatoes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Prepare the steak: Begin by seasoning your steak generously with salt, black pepper, and Italian seasoning. Let it sit at room temperature for about 15 minutes for even cooking.
  2. Cook the steak: In a skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the seasoned steak. Sear it for about 3-4 minutes on each side for medium-rare, or longer if you prefer it more done. Remove from the skillet and let it rest.
  3. Cook the tortellini: In a large pot of boiling salted water, cook the tortellini according to the package instructions. This usually takes about 3-5 minutes for fresh tortellini and slightly longer for frozen. Drain and set aside.
  4. Make the Creamhouse Sauce: In the same skillet used for the steak, reduce the heat to medium and add a splash of olive oil if needed. Add the cracked garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer.
  5. Add cheese and seasoning: Stir in the grated Parmesan cheese and a splash of lemon juice. Season with salt and pepper to taste. Let it simmer for about 5 minutes until it thickens slightly.
  6. Add vegetables: Toss in the baby spinach and sun-dried tomatoes, stirring until the spinach wilts.
  7. Combine everything: Slice the rested steak into strips and add it back into the skillet along with the drained tortellini. Gently toss everything together, ensuring the tortellini is coated in the creamy sauce.
