Description
A delicious and healthy sauté featuring fresh kale and mushrooms.
Ingredients
Scale
- 4 cups fresh kale, chopped
- 2 cups cremini or shiitake mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Wash the kale under cold water, remove tough stems, and chop into bite-sized pieces.
- In a large skillet over medium heat, add olive oil. Once hot, sauté the sliced mushrooms and minced garlic for 5-7 minutes until golden brown.
- Add the chopped kale to the skillet, stirring well to combine. Cook for another 3-4 minutes until wilted.
- Remove from heat, squeeze fresh lemon juice over the mixture, and season with salt and pepper to taste.
- Serve hot in a bowl; drizzle with extra olive oil if desired.
Notes
- This dish can be served as a side or a light main meal.
- Feel free to add other vegetables or proteins as desired.
