Description

A delicious and healthy sauté featuring fresh kale and mushrooms.


Ingredients

Scale
  • 4 cups fresh kale, chopped
  • 2 cups cremini or shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash the kale under cold water, remove tough stems, and chop into bite-sized pieces.
  2. In a large skillet over medium heat, add olive oil. Once hot, sauté the sliced mushrooms and minced garlic for 5-7 minutes until golden brown.
  3. Add the chopped kale to the skillet, stirring well to combine. Cook for another 3-4 minutes until wilted.
  4. Remove from heat, squeeze fresh lemon juice over the mixture, and season with salt and pepper to taste.
  5. Serve hot in a bowl; drizzle with extra olive oil if desired.
