Description

A refreshing salad made with soba noodles and fresh vegetables, dressed in a tangy soy sauce dressing.


Ingredients

  • 8 oz soba noodles (or any preferred cold noodle)
  • 1 cup cucumber (julienned)
  • 1 cup carrot (julienned)
  • 1 cup red bell pepper (sliced)
  • 1/4 cup green onions (chopped)
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey (or maple syrup for vegan option)
  • 1 clove garlic (minced)
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Cook the soba noodles according to package instructions. Drain and rinse under cold water to cool.
  2. While the noodles are cooking, prepare the vegetables by julienning the cucumber and carrot, and slicing the bell pepper.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and minced garlic.
  4. In a large mixing bowl, combine the cooled noodles, vegetables, and dressing. Toss well to combine.
  5. Garnish with sesame seeds and chopped green onions before serving.

Notes

  • This dish can be served cold or at room temperature.
  • For a vegan option, substitute honey with maple syrup.
