Description
A refreshing salad made with soba noodles and fresh vegetables, dressed in a tangy soy sauce dressing.
Ingredients

- 8 oz soba noodles (or any preferred cold noodle)
- 1 cup cucumber (julienned)
- 1 cup carrot (julienned)
- 1 cup red bell pepper (sliced)
- 1/4 cup green onions (chopped)
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey (or maple syrup for vegan option)
- 1 clove garlic (minced)
- 1 tbsp sesame seeds (for garnish)
Instructions
- Cook the soba noodles according to package instructions. Drain and rinse under cold water to cool.
- While the noodles are cooking, prepare the vegetables by julienning the cucumber and carrot, and slicing the bell pepper.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and minced garlic.
- In a large mixing bowl, combine the cooled noodles, vegetables, and dressing. Toss well to combine.
- Garnish with sesame seeds and chopped green onions before serving.
Notes
- This dish can be served cold or at room temperature.
- For a vegan option, substitute honey with maple syrup.
