- 1 package refrigerated biscuit dough (8 pieces)
- 4 oz cream cheese, softened
- 1/2 teaspoon vanilla extract
- 1 cup granulated sugar (for coating)
- 1 tablespoon cinnamon (for coating)
- Oil for frying
Instructions
- Prepare the Peach Filling: In a bowl, mix diced peaches with 1/4 cup of sugar, 1/2 teaspoon of cinnamon, and lemon juice. Let sit for 10 minutes to macerate.
- Prepare the Cream Cheese Mixture: In another bowl, blend cream cheese with vanilla extract until smooth.
- Assemble the Bombs: Flatten each biscuit into a circle. Spoon a small amount of cream cheese mixture onto the center of each biscuit. Add a spoonful of the peach mixture on top. Fold the biscuit over the filling and seal by pinching the edges. Ensure they are fully closed to prevent leaking during frying.
- Fry the Bombs: Heat oil in a deep fryer or heavy pot to 350°F (175°C). Carefully place each bomb into the hot oil, frying in batches if necessary. Fry until golden brown on all sides, about 3-4 minutes. Remove and place on paper towels to drain excess oil.
- Coat with Cinnamon Sugar: Combine 1 cup of sugar and 1 tablespoon of cinnamon in a shallow dish. Roll warm bombs in the cinnamon sugar mix until fully coated.
