A delicious tart featuring caramelized onions and Gruyère cheese.

- 1 sheet puff pastry (thawed)
- 3 large onions (sliced)
- 2 tablespoons olive oil (for caramelizing)
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (to taste)
- 1 cup heavy cream
- 2 large eggs
- 1 cup grated Gruyère cheese
- 1 tablespoon fresh thyme (chopped)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and fit it into a tart pan. Prick the bottom with a fork and set aside.
- In a frying pan, heat the olive oil over medium heat. Add the sliced onions and salt, cooking slowly until they are golden brown and caramelized, about 25-30 minutes.
- In a mixing bowl, whisk together the heavy cream, eggs, black pepper, and thyme. Stir in the caramelized onions and grated Gruyère cheese.
- Pour the onion mixture into the prepared pastry crust.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden.
- Allow the tart to cool slightly before slicing. Serve warm or at room temperature.
