Description

This delicious asparagus puff pastry tart is a perfect appetizer or light meal.


Ingredients

  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg (beaten)
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon fresh parsley (chopped, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to fit a baking sheet.
  3. Transfer the rolled pastry to a baking sheet lined with parchment paper.
  4. In a mixing bowl, combine ricotta cheese, Parmesan cheese, beaten egg, lemon zest, salt, and black pepper. Mix until smooth.
  5. Fold in the asparagus pieces gently until well coated.
  6. Spread the asparagus filling evenly over the puff pastry, leaving a small border around the edges.
  7. Drizzle olive oil over the filling.
  8. Bake in the preheated oven for 25 minutes or until the pastry is golden brown and puffed.
  9. Remove from the oven and let cool slightly.
  10. Garnish with chopped parsley before slicing and serving.
