- 1 sheet puff pastry (thawed if frozen)
- 1 bunch asparagus (trimmed and cut into 2-inch pieces)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg (beaten)
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil (for drizzling)
- 1 tablespoon fresh parsley (chopped, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface to fit a baking sheet.
- Transfer the rolled pastry to a baking sheet lined with parchment paper.
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, beaten egg, lemon zest, salt, and black pepper. Mix until smooth.
- Fold in the asparagus pieces gently until well coated.
- Spread the asparagus filling evenly over the puff pastry, leaving a small border around the edges.
- Drizzle olive oil over the filling.
- Bake in the preheated oven for 25 minutes or until the pastry is golden brown and puffed.
- Remove from the oven and let cool slightly.
- Garnish with chopped parsley before slicing and serving.
Notes
- For a richer flavor, you can add more cheese.
- Serve warm or at room temperature.
